Chilled Soups
This is the kingdom of chłodnik in all its different forms.
At The Eatery Trad. in Powiśle, you'll find a version made with kefir, yogurt, cucumber, and cherries. At Alina, inside the Zachęta National Gallery of Art, chłodnik is served with baked potatoes, herbs, eggs, and red caviar, while Starlet, in Centrum Praskie Koneser, prepares chłodnik using four different kinds of cucumber. And if you're after the ultimate classic, head to the tiny Perełka bistro in Saska Kępa, where chłodnik is made with field-grown cucumbers, dill, and egg.

A welcome exception to all the chłodnik is the classic Andalusian soup ajo blanco, served at Koneser Grill, one of Ferment Group's flagship restaurants. It's the perfect choice for anyone who enjoys unusual flavour combinations and flawless execution: soaked ciabatta, fire-roasted potatoes, and plenty of almonds – Piotr Wójcik's recipe for the perfect summer soup.

And then there's the truly wild option: the limited-edition watermelon ramen from Vegan Ramen Shop, where the broth is closer to a fruit compote than a traditional ramen stock, while the toppings include strawberries, tofu, edamame, and a cashew-based sauce.
Chanterelle Dishes
Although chanterelle season is only just beginning, plenty of Warsaw restaurants are already serving dishes built around these forest mushrooms. You simply need to know where to look.
At Tma, they've created an entire chanterelle menu, ranging from chanterelle risotto with teriyaki sauce to new potatoes with beurre blanc and, naturally, chanterelles.

The rebellious Włoski Strajk Italian Sharing has also introduced a dedicated seasonal section. Among the dishes are toast made with Baken bread, porchetta with chanterelles and new potatoes, as well as chanterelle pasta.
At Pizzaiolo, you'll find what has already become a Warsaw seasonal classic: Neapolitan pizza with chanterelles. Crème fraîche, mozzarella, and Pecorino Romano are all exactly where they should be.

Naturally, Bibenda couldn't be left out. Seasonality has long become part of the restaurant's signature style, and this year's menu features kopytka with Bursztyn cheese, chanterelles, cream, and yellow tomato salsa.
At the ever-popular Przegryź, kluski śląskie are served with chanterelles, tomato salsa, marjoram, and pickled onions, while Italian restaurant Lupo pairs its Fazzoletti pasta with chanterelles, confit egg yolk, marjoram, and watercress pesto.

Seasonal Berry Dishes
Berry desserts aren't just a summer staple – they're practically a necessity.
At Wandal strawberries and cream are reimagined in an elegant dessert that instantly takes you back to childhood. Meanwhile, the unapologetically bold Brut serves leniwe dumplings with pistachios and strawberries.

Chef Mateusz Karkoszka at Win continues his signature style of refined, beautifully balanced flavours, combining strawberries with a yogurt and maślanka panna cotta, cardamom, and tarragon oil. Over at Sole! Powiśle, panna cotta comes with saffron, fresh strawberries, elderflower syrup, and – once again – a hint of tarragon.
At the newly opened Baba Jaga, you'll find blueberries paired with crème fraîche, basil, and lime.
Cherries are another seasonal favourite. You'll find them paired with burrata and balsamic at Spanish restaurant Padron, while Georgian restaurant Lomi takes a completely unexpected direction by filling chebureki with cherries.

And, of course, no summer would be complete without seasonal pastries: wild strawberry buns from Urszi and Blacha, as well as jagodzianki from places like Tadam, Kostki, Muus, Dej, Zbożna, or Doza.
Summer Drinks
Cocktails and wine deserve their own guide, so for now let's focus on the best alcohol-free options.
Two of the most obvious choices are the rooftop terrace at Mund Up on the eighth floor of the Puro hotel, where the non-alcoholic selection always includes Copenhagen's Bla sparkling tea alongside Germany's Fraya No. 1, and Win. Thanks to Enoterra, the latter offers an outstanding range of Feral fermented drinks and almost the entire collection from Copenhagen's innovators at Muri.

Another option is to head somewhere a little more social for a mocktail – Barbara, which recently introduced a dedicated aperitivo slot from 4 pm to 7 pm, or the hidden Martini terrace at the townhouse on Lwowska 13.

Another perfect summer choice is coffee-based cold drinks.
The undisputed classic is the Espresso Tonic at Forum, where the tonic itself is made in-house. If you're after more adventurous flavour combinations, head to Bejbi, Po Drodze with its extensive 18-drink summer menu featuring an iced mocha with blackcurrant and an espresso tonic with ginger, Secret Life Café for its Salted Cream Coffee, or Astra Coffee, where you'll find both the Filter Fizz and Kawowa Soda.

And, of course, summer matcha drinks deserve a special mention – from the Matcha Cloud at Okeh to protein-packed creations like the Matcha Protein Power at Manto Cafe.
