Charlotte Bouillon opens on Złota 83

Charlotte has opened a new Bouillon inside the restored Wolf Krongold townhouse at 83 Złota Street. It is the second restaurant in the group's bouillon format after the original on Nowy Świat, bringing a style of dining inspired by the historic Parisian bouillons of the late 19th century – large, bustling restaurants serving French classics at accessible prices.

Unlike Charlotte's bakery-led locations, the menu here focuses on classic French cooking inspired by the Parisian bouillon tradition. Prices start from 22 zł for meat and vegan bouillons, followed by Burgundy snails (28 zł), ratatouille (34 zł), coq au vin (38 zł), boeuf bourguignon (40 zł) and steak haché (42 zł). The restaurant also keeps the elements that have defined Charlotte for the past 15 years, including bread from its own bakery, house-made jams and all-day breakfast, alongside madeleines from 3 zł, viennoiserie from 6 zł, tartines from 15 zł and French omelettes from 16 zł.

The project also introduces one of Charlotte's most ambitious interiors to date. Designed by Loskiewicz.Studio and 89 stopni together with architect Maciek Dudkiewicz, the space preserves the scale and rhythm of the 19th-century townhouse while adding mirrored details inspired by classic French bistros, burgundy accents and natural wood. A restored painting by Marta Kochanek-Zbroja, previously displayed in the original Charlotte on Plac Zbawiciela, has also found a new home here.

According to the founders, the Bouillon format was chosen specifically for this location, with the scale and architecture of the historic building lending themselves to a concept inspired by Paris's historic neighbourhood restaurants rather than a traditional bakery.

Charlotte Bouillon is open daily from 7:00 a.m. until midnight (from 8:00 a.m. on weekends), making it one of the few places in Warsaw where breakfast, lunch and dinner are served under one roof from early morning until late at night.
